Recipe 1:Salsa Tatemada
5 large tomatoes or 8 romas
3 jalapenos rough chop
1 1/2 white or yellow onion rough chop
1 tsp garlic powder
1/2 bunch of cilantro, leaves only
Juice of 2- 2 1/2 limes
3 Tablespoons or more kosher salt
Roast tomatoes and jalapenos over open flame until blackened, blistered, and softened. Oven broiler can be used in a pinch. Combine all ingredients into blender and pulse chop, or utilize an immersion blender. Stick immersion blender is preferable.
Recipe 2: Migas(Austin, Texas-style brunch eggs)
1/2 white or yellow onion small dice
1 roma tomato small dice
1 jalapeno small dice
8 tortilla chips
6 oz. Monterrey jack
1/2 tsp salt
2 pinches cilantro leaves
Sautee the diced roma until water in the tomatoes begins dry out a bit. A wet tomato will affect the consistency of the eggs. Sautee the onions and jalapeno with the tomatoes. Fold in the eggs and stir the eggs just until they are lightly mixed. Crumble tortilla chips into the egg mixture in the pan. Add cilantro at the very end to ensure freshness. Cover eggs with monterrey jack to melt. Serves 2.
Can be served in warm tortillas as a breakfast taco.
