Recipe 1: Apple Rosemary Chicken

One whole roasted chicken
2 green apples sliced skin on
2 sprigs fresh rosemary minced
1 cup apple cider
1/2 cup Apple cider vinegar
1 yellow onion quartered
1 cup butter melted
1/4 cup Dijon mustard
1/2 cup brown sugar
salt and pepper
2 feet of cheese cloth

Set oven to 350 degrees. In a medium pan combine 1/2 melted butter, apple cider, brown sugar and Dijon mustard and heat till sugar melts. With paper towels or cloth pat chicken dry. Make sure heart, neck and kidneys have been removed. Pour remaining melted butter over the top of bird. Stuff rosemary, onion and apple inside cavity. Salt and pepper over butter. Place cheese cloth in apple cider vinegar and wrong out slightly. Place cheesecloth directly over entire bird. Roast in oven till 165 internal temperature. Remove bird from oven and pour drippings into pan with sugar mixture. Remove apples and onions and place in sugar mixture and heat till bubbly. Carve bird and pour mixture over bird and serve.

Recipe 2: Cinnamon Shortcakes

4 cups all purpose flour
3/4 cup sugar
2 tablespoons baking powder
2 tsp ground cinnamon
1/2 tsp kosher salt
1 cup heavy cream chilled
3/4 cup unsalted butter chilled
2 whole eggs
1 cup cinnamon chips
1 cup golden raisins

Set oven at 350 degrees. In a large mixing bowl, combine flour, sugar, baking powder, salt and cinnamon. Mix thoroughly. In a separate bowl which eggs. Add chilled butter using a cheese grater. Toss chilled butter lightly into dry mix. Slowly add alternating egg and heavy cream. Finally add cinnamon chips and golden raisins. Form dough into three equal balls on a lightly floured surface. Cut into 8 equal pie slices and place on a greased baking sheet. Bake for 15 to 18 minutes. Dust with additional sugar and serve!
